Bikini Recipe

Makes enough for 10 servings

To make the Citrus Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar

Ingredients for the Premix (makes 850ml, enough for 10)

400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing

Method

To prepare the Syrup: Combine all the components inside a pot, bring to a simmer, mixing until the sugar dissolves. After that, take off the stove and leave to cool down fully. Pour into a sterilised bottle, cap it and store chilled, where it will keep for up to a month.

Preparing the Premix: Pour all the spirits and syrup into a sizeable container, leave to sit for 60 minutes, then strain , ideally through cheesecloth, to ensure it's completely strained.

To serve: Add 85ml of your batch mix into a cocktail shaker containing ice, and agitate carefully for one minute to chill. Pour into a frosted cocktail glass or equivalent, decorate with a few cranberries adding the final touch with a quick spritz with the mandarin essence above the glass.
